Whole Wheat Lemon Yogurt Bread
Jana here with a delicious quick bread recipe! I purchased some lemons a couple of weeks ago to use for a centerpiece on my dining room table. I was looking forward to spring days filled with sunshine, and the yellow lemons helped brighten up my table! After awhile, it was obvious that it was time to juice the lemons, and find some recipes to use the juice in! I came across this recipe, and modified it some for the ingredients we had on hand. It was so good, and fairly healthy! It doesn't have a strong lemon taste, just enough to make it so good! It is very moist, and makes the house smell awesome while it's cooking!
Whole Wheat Lemon Yogurt Bread
1 egg
1/3 cup canola oil
1 cup yogurt (you may use Greek or regular...plain or vanilla)
3 tablespoons lemon juice
1/2 teaspoon vanilla extract
1 1/2 cups whole wheat flour
3/4 cup sugar (this can be reduced if using vanilla yogurt)
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1. Preheat oven to 325 degrees.
2. Mix egg, oil, yogurt, lemon juice, and vanilla extract until well combined.
3. In a medium sized bowl, combine flour, sugar, salt, baking soda, and baking powder.
4. Add the dry ingredients to the wet ingredients, stirring to combine.
5. Grease a loaf pan, and pour mixture into pan. Bake for 45 minutes.
