Whole Wheat Muffin Surprise!
Becca here with a fun recipe my 7 1/2 year old daughter was able to make largely on her own. She chose the recipe out of a children's cookbook called Pretend Soup, and we made only a few alterations. The muffin is a good basic sweet muffin, with the fresh berry inside adding a nice surprise inside that two of my children loved. If your children aren't quite old enough to make the muffins by themselves, pushing the prepared strawberries down into the muffin mix would be a fun & easy way to help. Enjoy!
1 1/2 cups flour (I used hard wheat I ground myself)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
2 eggs
1 cup milk
1/2 teaspoon vanilla
4 Tablespoons melted butter
12 medium-sized strawberries
2-3 Tablespoons sugar for strawberries.
Line 12 regular sized muffin tin cups with liners. Preheat oven to 375.
In a large bowl, combine dry ingredients (flour, baking powder, baking soda, salt, and sugar).
In a separate bowl, whisk together eggs, milk, vanilla, and melted butter.
Pour milk mixture into flour mixture and stir just until mixed.
Use a 1/4 cup measuring cup to fill each muffin liner halfway (don't overfill!)
Roll each strawberry, leaves removed, into a bit of sugar, and then push down into the center of each muffin liner.
Bake 15-20 minutes, or until risen and golden brown.
Let cool 10 minutes before serving, as the strawberries will be quite hot!
