Brunch Coffee Cake
Jana here with a recipe that I got from my Grandma! She and my Papaw came to visit one day, and brought this delicious cake. My husband actually requested it, because he remembered eating it at another family get-together in the past. It is a really moist, delicious cake that is very easy to put together!
Brunch Coffee Cake
1 yellow cake mix
1 box instant vanilla pudding
1 box instant butterscotch pudding
1 cup canola oil
1 cup water
4 eggs, beaten
1 teaspoon vanilla extract
1 cup pecans, chopped
1 cup brown sugar
1. Preheat the oven to 350 degrees. In a large bowl, combine the cake mix, pudding mixes, oil, water, eggs, and vanilla extract.
2. Prepare the topping (pecans and brown sugar) in another small bowl, mixing the two together.
3. In a 9x13 glass baking dish, spread 1/2 of the batter on the bottom. Add 1/2 of the pecan mixture on top. Pour remaining batter on top (spread out evenly), and top with the rest of the pecan mixture.
4. Bake for 40-45 minutes.
