Oatmeal Cookies
Jana here with a really versatile cookie recipe! Sometimes you're just in the mood for a homemade cookie. That mood hit me a few weeks ago, and I had some cinnamon chips (like chocolate chips, but cinnamon) on hand that I wanted to find a use for. These cookies were great, and the best thing is that you can add lots of different add-ins to them! You could bake the basic oatmeal cookie without any add-ins, or you could mix in chocolate chips, raisins, pecans, etc. The possibilities are endless! I found the recipe here.
Oatmeal Cookies
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla extract
1 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/2 cups quick cooking oats
1/2 cup 'add-ins' (optional)
1. In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in egg, then add vanilla.
2. Combine flour, baking powder, salt, and cinnamon. Stir into the butter mixture, and mix well. Add the oats, and stir. Refrigerate doug for at least an hour. (I like to wrap it in plastic wrap)
3. Preheat the oven to 375 degrees. Grease cookie sheets. Roll the dough into walnut sized balls, and places on cookie sheets. Flatten with a fork.
4. Bake for 8-10 minutes. Allow cookies to cool for 5 minutes before removing from cookie sheets. Cool on a wire rack.

Where did you buy the cinnamon chips?
ReplyDeleteI got them in the clearance section at my Walmart store after the holidays. I think they only carry them as a seasonal item at my store.
DeleteI made these last night and tossed in some mini chocolate chips. Mr. Mister really enjoyed them, which is great considering that he isn't a fan of oatmeal cookies!
