Peanut Butter Chip Banana Bread

Although I don't bake as often as I would like, I still enjoy baking a sweet treat every now and then! I made this bread for my turn at hosting playgroup.  This is something I love to do-bake something when you'll have company! We try to watch how many sweets/desserts we have so baking with company allows us to have a treat, but not a huge portion.  Another option is to make more than loaf and freeze one for later.  What a sweet gift this would make for a friend too! Simply wrap and tie with some pretty string/ribbon and a thoughtful note.
Although this is a bread we ate it for dessert! It is very rich and sweet.  If eaten for breakfast I suggest some protein and a strong cup of coffee to go along with it.

Peanut Butter Chip Banana Bread
Ingredients:
3 very ripe bananas
1/2 cup natural peanut butter (we like Smucker's Natural brand!)
1/4 cup oil
1 egg
1/2 cup granulated sugar
1/4 cup brown sugar
1 and 1/2 cup all-purpose flour
1/2 tsp baking soda
1 and 1/2 tsp baking powder
1/2 tsp salt
1 bag Reese's brand peanut butter chips (found on the chocolate chip aisle!)

Directions:
1.) Heat oven to 350 degrees.  Grease an 8 by 4 loaf pan with butter.
2.) In a medium bowl whisk together flour, baking soda, baking powder and salt.
3.) In a large bowl stir together bananas, peanut butter, oil, egg, and sugars.
4.) Pour dry ingredients into wet ingredients and stir until just combined. Your batter will most likely be lumpy but don't over stir!
5.) Fold in the Reese's peanut butter chips into the batter.
6.) Spread batter into the prepared loaf pan.
7.) Bake for 45 minutes to an hour or until toothpick inserted into center comes out clean!
8.) Let bread cool for 10 minutes and then loosen edges of bread in pan before removing.

Happy Eating!
Sara :)

  1. So making this today! I think I am going to use chocolate chips since that is what is in the pantry. Have a blessed day.
