Chocolate Energy Bites


Jana here with a really yummy snack idea!  The minute I saw these Chocolate Energy bites on a blog, The Cheapskate Cook, I knew I wanted to try them right away!  These are a snack that anyone will love, because they taste like a cookie!  You can either think of them as a healthy cookie, or a special snack.  Either way, they are delicious!  Once you make them, they won't last long!  They're THAT good!  The best part is, you know exactly what went into these (as opposed to a store-bought granola bar), and they are much cheaper to make then a box of granola bars!  (especially the 'healthy' kind!)

Chocolate Energy Bites

1 cup rolled oats
1/2 cup peanut butter
1/3 cup honey
1 cup unsweetened coconut flakes (or sweetened if you would like)
1/2 cup flaxseed (or ground nuts)
1/2 cup chocolate chips (or raisins)
1/4 cup cocoa powder (optional)
1 teaspoon vanilla

1. Mix all ingredients in a medium-sized bowl, making sure to mix thoroughly.

2. Cover and put in the refrigerator to chill for about an hour.

3. Roll dough into balls about 1 inch in diameter.  (will make about 25-30)

4. Store bites in a sealed container in the regrigerator for up to a week!

I highly recommend these!  I think they are a great 'treat snack' to have on hand!  Enjoy!

  2. Very yummy! We have made them twice now. We prefer them without the cocoa and chocolate chips. This time we added a little chocolate syrup instead...delicious!
