Lasagna Soup

Jana here with a great meal for a cold winter night!  I got inspiration for this Lasagna Soup from The Deen Bros (Paula Deen's sons') website.  They said they had taken her original recipe (which are rarely known for being healthy!), and made a lower calorie version.  I didn't have extremely high expectations for this, but it is amazing!  The ingredients are simple, but the flavor is so good!!  The prep time is very short, so it's a great weeknight meal! 


Lasagna Soup

2 teaspoons olive oil
1 pound ground turkey (or other ground meat)
1 onion chopped
3 cloves minced garlic
2 cans chicken broth (14.5 ounces)
1 can tomato sauce (15 ounces)
1 can diced tomatoes (14.5 ounces)
1/2 cup water
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
4 ounces whole wheat pasta (I used penne)
1 teaspoon basil
3 tablespoons grated parmesan cheese
1/2 cup shredded mozzarella cheese

1. Heat the oil in a large skillet, and saute the meat, garlic, and onion. 

2. Move meat mixture to a large pot, and add broth, tomatoes, tomato sauce, water, salt, crushed red pepper, basil, and parmesan cheese.  Bring to a boil, then reduce to a simmer.  Let simmer for about 20 minutes, stirring occasionally.

3. Add the noodles, and bring to a boil.  Reduce the heat and simmer, until noodles are cooked and sauce thickens. (about 12 minutes, but can let simmer longer)

4. Remove from heat, and top with mozzarella before serving!
