Easiest Chicken Caesar Salad


So quick funny question-I googled how to spell Caesar because I couldn't remember if the "a" or "e" came first. I found both spellings. Anybody know? The former teacher in me is coming out!
   This is the easiest dinner (or lunch!) salad. EVER. It probably doesn't even technically qualify as a recipe, but it's too good and simple to not share.
To make this I sprinkle lemon pepper seasoning on boneless, skinless chicken breasts and then put on the George Foreman grill. I don't time how long the meat cooks, but I'd say it's about 8 to 10 minutes or so. I usually take it off when it looks charred a bit and cut in two to see if the inside is done.
Next, put on a bed of lettuce (go for the nutritional stuff, like the spinach leaf lettuce), top with your choice of cheese and caesar dressing and you're done!
So delicious! We like ours with sparkling water and sometimes a cheese sandwich too. :)

*I will say this-I am still on the lookout for a caesar dressing I'm a fan of. I read all of the ingredient labels before buying one (I ended up with Ken's Steakhouse Light Creamy Caesar) because I was surprised to find most of them have corn syprup in them. The particular kind I bought said it had less than 2% of it which I suppose was a tad better. I've also made my own dressing before but it has mayonnaise which is very fatty. So, I'm still thinking on the dressing and will enjoy Ken's Steakhouse for now.

  1. I am having a problem finding a Ranch dressing we like that is healthy also. Do you have a favorite?
    I liked this salad recipe because it is tasty and easy. Roger likes fresh spinach also so I like to go with my families healthy likes when I can!

  2. We don't typically buy ranch dressing (we like olive oil and basaltic vinegar instead, or sometimes just the vinegar!) but I did find this recipe for ranch dressing that isn't processed: http://recipes.sparkpeople.com/recipe-detail.asp?recipe=1521561

    1. Thanks, I'll give this recipe a try. I need to start making my own because there are several things I'm allergic to (soy products is one).

  3. Lynda - I have a recipe for ranch I like that I mix with Greek Yogurt so it's pretty healthy! A bit high on sodium, but no fat or anything weird in it :) I'll email it to you.....Becca
