Becca here with one of my kids' favorite recipes. In fact, my daughter requested them for her soon upcoming seventh birthday party! They make a great protein-packed side dish, and are very economical too. I think these have the perfect mixture of creamy vs. tangy, and couldn't be easier. My recipe serves five, since I have five in my family, but feel free to double for company or a potluck. Don't let the simplicity of the recipe fool you, this is my favorite way to eat deviled eggs by far! This is another recipe that is great to get the kids in the kitchen with, peeling boiled eggs is a great task for even the little ones.
Becca's Deviled Eggs
5 boiled eggs
1 Tablespoon mayonnaise
1 teaspoon mustard
salt & pepper to taste (I use a dash of each)
dried dill weed, to top
Peel boiled eggs and slice into half lengthwise. Carefully remove yolks, and add them to a small bowl. Add mayonnaise, mustard, salt, and pepper and use a fork to combine, and mash yolks until a smooth consistency is reached. Using a tablespoon, add the yolk mixture back into the egg whites. Sprinkle with dried dill weed, and serve!
