Easy Chicken Cacciatore

Hi everyone! I'm here with a surprisingly easy recipe that can be made in the crock-pot. Although many people think of using the crock-pot during the winter months, I appreciate it's use in the summer months! One less day to turn on the hot oven is a great day to me! :) This recipe uses fresh, real ingredients and spices and tastes delicious. I served this meal over pasta, and would encourage you to make the easy switch to whole-wheat pasta. 

Easy Chicken Cacciatore
Ingredients:
5 chicken thighs, with the skin removed
28 oz. can crushed tomatoes
1 red bell pepper, diced
1 green bell pepper, diced
1 onion, diced
Season to taste with: Oregano, basil, parsley, salt, and pepper

Directions:
Season chicken thighs with salt and pepper and place in crock-pot.  Pour can of crushed tomatoes over the top of the chicken.  Next, add diced peppers, onion, and spices.  Mix the ingredients well and make sure each piece of chicken is covered.
Place the lid on the crock-pot and cook on low 8 hours, or on high 4 hours.

Before eating, boil some whole-wheat pasta on the stove-top and then serve the chicken cacciatore over the top.

*This made quite a bit of extra sauce.  You could easily add more chicken thighs to the crock-pot and have plenty of sauce for up to 10 chicken thighs.
