Chocolate Waffles



Jana here with a waffle recipe that is a real treat for breakfast, or rich enough to have as a dessert!  My husband celebrated a birthday recently, and I wanted to make him something special for breakfast!  I found this recipe in my Joy of Cooking cookbook, and it did not disappoint!  The recipe makes approximately 8 waffles, so we had plenty of waffles to eat for several mornings!  I found these were just as freezer friendly as my whole wheat waffle recipe.  The chocolate waffles are a little more delicate, so be aware of that when you remove them from the waffle iron. With that being said, I didn't have a problem with any of them sticking or anything.  The cookbook suggested serving these with vanilla ice cream as a dessert, and I think that would be really good!  We sprinkled some powdered sugar on top of ours, and they were really good!  I would like to try these another time with strawberries on top!

Chocolate Waffles

1 1/2 cups all-purpose flour
1 1/3 cups sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1 cup milk
1/4 cup plus 2 tablespoons vegetable oil
1 teaspoon vanilla extract

1. Preheat your waffle iron.  In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.

2. In a medium bowl, whisk the eggs until frothy. Add the milk, oil, and vanilla extract and mix well.

3. Add the wet ingredients to the dry ingredients, and combine. Don't overstir.

4. Cook in a waffle iron.

Enjoy!

  1. How about topped with some homemade salted buttermilk caramel sauce with the ice cream? YUM!
