Parmesan Orzo with Pine Nuts

Jana here with a side dish that is really unique, and tastes delicious!  I got the inspiration from this blog. (which I found on Pinterest)  I had never cooked with pine nuts before, but had enjoyed eating them in different dishes at restaurants.  I purchased a bag at Walmart, near the produce section.  They are somewhat expensive, but seem to go a long way.  This recipe only used a small portion of the bag.  There are many other recipes you can use them in!  The orzo is a very small pasta.  You can find it in a box on the pasta aisle!


Parmesan Orzo with Pine Nuts

2 tablespoons butter
1 1/2 cups orzo
1 1/3 cup chicken broth
3 tablespoons parmesan cheese
2 tablespoons pine nuts (can be toasted ahead of time if you prefer)
1/2 tablespoon parsley
salt and pepper to taste

1. Heat the butter in a saucepan using medium heat. 

2. Add the orzo, and cook for approximately 5 minutes, or until part of the noodles have turned brown. (stirring often)

3. Add the chicken broth, bring to a boil, then reduce to a simmer for 13-15 minutes.

4. Add the remaining ingredients, and stir until well blended.

  2. We had green beans seasoned with ham with this dish. It would go well with any type of meat (I think chicken would be really good!), and a veggie!
