Pumpkin Pancakes

Today I have a delicious winter breakfast recipe for you!  We like to make a special breakfast on Saturday mornings, and we are always trying out different recipes for pancakes, waffles, french toast, etc.  Pancakes are a great recipe for your children to help you mix up!  My son loves to scoop the different ingredients, pour them in the mixing bowl, and help stir!  This recipe is very hearty, and will be enjoyed by the whole family!


Pumpkin Pancakes

1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
2 cups all purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon salt

1. Mix together the milk, pumpkin, egg, oil, and vinegar. 

2. In a separate bowl, mix the dry ingredients.  (remaining ingredients)

3. Add dry ingredients to pumpkin mixture, and stir just until combined.

4. Using a griddle or frying pan warmed to medium heat, scoop approximately 1/4 cup of the mixture onto pan.  Brown both sides.

  1. Think you guys (gals) could develop a header at the top of each day's post, so we know who's recipe/post it is? I have to go back two or three days sometimes just to find out which spice I'm reading.
