Savory Stirfry and Couscous


Jana here with a meal that you can have on the table in 15 minutes, is healthy, flavorful, and filling!   Many people think that a 'convenience meal' has to be a box meal, such as Hamburger Helper.  Not only is that not healthy, but it takes just as long or longer to make than this meal does!  The couscous that I used came from the aisle that has rice and dry beans.  There are several different boxes of quick fix couscous, and the 'plain' (no flavor added) kind is what I used.  Since it doesn't have added seasonings, the sodium isn't high like the other varieties.  The couscous only takes 5 minutes to cook!  The stirfry came from the freezer section, and there were 4 or 5 varieties to choose from!  Ours has broccoli, squash, peppers, green beans, snap peas, carrots, and water chestnuts.  Lastly, I had a bag of frozen shrimp.  These ingredients plus seasonings, plus about 15 minutes is all you need for this delicious meal!

Savory Stirfry and Couscous

1/2 box couscous (3/4 cup uncooked)
1 bag frozen stirfry vegetables
1 bag frozen shrimp (12 ounces - 1 lb)
2 teaspoons olive oil
1 teaspoon minced garlic
1 tablespoon worchestershire sauce
1/2 - 1 teaspoon onion powder
1/2 - 1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon chili powder
salt and pepper to taste
Parmesan cheese

1. Cook the couscous according to the package directions. I used chicken broth in place of the water to add flavor.

2. Heat the olive oil over medium heat in a large skillet.  Add minced garlic, and saute for about 1 minute.  Add frozen vegetables and frozen shrimp. 

3. Cook for approximately 12-15 minutes, checking to make sure everything is heated through.  Add the seasonings after about 5 minutes of cook time. 

4. Top couscous with stirfry and shrimp, and sprinkle parmesan cheese on top if desired!

Enjoy!

*Chicken may be substituted for the shrimp.
