Honey Baked Acorn Squash

Jana here with a side dish that is perfect for the colder weather!  I think everyone in your family will be pleasantly surprised by this recipe, and will be asking for more! I modified a recipe I found on All Recipes.

Honey Baked Acorn Squash

1 medium acorn squash
3 tablespoons honey
2 tablespoons butter, melted
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ginger

1. Preheat oven to 375 degrees. In a bowl, combine the honey, butter, and spices.

2. Cut the squash in half, and remove the seeds and stringy pulp. Pour the honey mixture into the squash halves.

3. Place the squash halves in a greased baking dish.  Cover, and bake for 45 minutes. Remove cover, and bake for 5-10 more minutes.

4. Remove the skin for the squash halves, then mash the squash with as much of the honey mixture as you would like.
