Snowball Cookies



Jana here with a fun recipe that many of you may know as Mexican Wedding Cookies.  When my kids and I were making them recently, it was a snowy day, so we decided to call them Snowball Cookies!  These only have a few simple ingredients, are so easy to make, and are a yummy treat!  The texture is different from 'regular cookies', so I like to make them to take to a get-together for something unique!

Mexican Wedding Cookies

1/2 cup (1 stick) butter, softened
1/2 cup powdered sugar, divided
1/2 teaspoon vanilla extract
1 cup flour
1/2 cup finely chopped pecans

1. Preheat oven to 350 degrees.  Beat butter, half of the powdered sugar, and vanilla in a large bowl with mixer until light and fluffy.

2. Gradually add flour and pecans, beating until well blended.

3. Shape dough into 1 inch balls, and place on ungreased baking sheets.

4. Bake 13-15 minutes, or until bottoms are lightly browned. Cool 5 min on baking sheets. Roll warm cookies in remaining powdered sugar until evenly coated.
