Fish and Chips

 My mouth is watering already! We had this for dinner last night and it is one of my top favorite meals. Fish and Chips-lightened up a bit. The "chips" are actually sweet potato fries, Swai fish with panko coating accompanied with homemade tartar sauce, and spinach drizzled with basalmic vinegar.

 Sweet potatoes are one of our favorite foods. We love to make Sweet Potato Fries out of them for a tasty treat! I've made these fries many times before and sometimes they have turned out mushy; others times burned. Last night they were just about perfect! I read somewhere to place a cooling rack on top of your baking sheet, and then place the fries on top of the cooling rack to bake, to ensure crispness all around, without having to "flip" the fries halfway through. I did this and it works!

Ingredients:
Fish and Chips
*Fish-You can use Tilapia, or Swai fish which is found in the freezer section at Wal-mart or your grocery store
*2 eggs
*1 and 1/2 to 2 cups Panko Bread Crumbs
*Spices-I used oregano, sage, parsley, garlic powder, and onion powder-I didn't measure these out but just sprinkled some in. You may season to taste-start with a small bit, add more if necessary!
*Olive Oil
Directions: Heat small amount of olive oil over medium to low heat in pan.  Thaw fish out by running it under hot water while still in the plastic package. Next, crack eggs in bowl and beat with a fork. Combine panko bread crumbs and spices in another bowl. "Assemble" fish by dipping in the egg mixture, then the panko mixture, and lastly, by frying in the olive oil. Allow to fry 3 to 4 minutes per side, at most. Turn when you notice a side getting "crunchy" and slightly tan looking.

Tartar Sauce:Combine mayo, lemon juice, and sweet relish to taste for a delicious sauce!

Sweet Potato Fries:
Ingredients:
*Sweet Potatoes (I used 3 for 3 people and had plenty of left-overs)
*Olive oil (or other cooking oil)
*Spices-I used chili powder and paprika with a bit of salt. Again, season to taste!
Directions: Heat oven to 400 degrees.  Wash potatoes first! Next, slice potatoes very thinly, in a size similiar to french fries. I leave the skin on. Cover with olive oil and spices and mix together in a bowl. You want the slices to be covered with olive oil, but not drenched or dripping. Lay potatoes out on cooling rack, on top of your baking sheet. Make sure potatoes are laying flat in a single layer-not on top of each other. Bake until crispy-around 30 to 40 minutes.
