Crock Pot Santa Fe Chicken


Jana here with a delicious slow cooker recipe!  I found this recipe on Skinny Taste, and just made small changes.  It literally only takes under 5 minutes to put the ingredients in the slow cooker, and it can cook for 6 - 10 hours.  (high setting versus low)   The recipe is low calorie (190 calories for one cup), and low fat!   I served ours over brown rice, and added cheddar cheese, avacado, and sour cream as toppings.  We added a salad, and it was a great meal! 

Crock Pot Santa Fe Chicken

1 1/2 pounds chicken breast
14.4 ounce can diced tomatoes with mild green chilies
15 ounce can black beans
8 ounces frozen corn
14.4 ounce can fat free chicken broth
1/2 teaspoon dried cilantro
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
1/2 teaspoon chili powder
salt to taste

1. Combine chicken broth, tomatoes, black beans, corn, and seasonings in the slow cooker.

2. Season chicken breast with salt, and lay on top.

3. Cook on low for 10 hours, or high for 6 hours.

4. Half an hour to an hour before serving, shred the chicken.
