Orange Creamsicles


Becca here with a yummy treat to make for summer.  It's also a very 'clean' recipe, one you can feel good about feeding your children! I saw the original idea on Pinterest, but wasn't able to track it down to a source.  I used a combination of popsicle molds that we've had for several years now, and reusable silicone push pops and both worked really well!  You'll end up with about 4 cups of popsicle liquid to use.  These really do have the classic orange creamsicle taste, while still being a healthy snack, and are a great recipe to have kids help with, since it's just measuring, mixing, and pouring.  Enjoy!

Orange Creamsicles

2 cups orange juice
2 cups coconut milk
2 Tablespoons real vanilla extract
4 Tablespoons honey (this is a great recipe to use local honey in since it will stay raw!)

In a large bowl combine all ingredients and whisk well to combine.  Pour into popsicle molds, remembering to allow a bit of space for expansion when freezing.  Freezer 4 hours or until ready to serve!
