Yellow Squash Patties


Jana here with another recipe that is great for a summer produce staple: yellow squash!  If you grow squash in your garden (or have a neighbor who does!), you most likely have an abundance of squash!  I was trying to be creative with diffeent ways that we could eat ours, and remembered a squash patty my Mom used to make growing up.  I searched All Recipes, and found one that seemed similar!  These were very easy to make, and tasted delicious! 

Yellow Squash Patties

4 medium yellow squash, shredded
1/2 onion, shredded
1 teaspoon salt
1/2 cup all purpose flour
1/4 cup cornmeal
1 egg, lightly beaten
1/2 cup shredded Cheddar cheese
1/2 teaspoon garlic powde
1/4 teaspoon black pepper

1. Shred the yellow squash, and microwave for 5-6 minutes.  (this step can be skipped if you don't mind the squash being 'firmer' in your patties....I wanted it soft)

2. In a medium sized bowl, mix all ingredients until blended well.

3. Heat a griddle or non-stick pan over medium-low heat.  Form small patties of the squash mixture. Using a small amount of oil, place the patties on the stove to cook.  Cook for several minutes on each side, or until they are browning.
